Chocolate Ganache

Equal parts by weight of Chocolate and heavy cream.  Bring the Cream to a boil and pour it over the chocolate.  Let is sit for about 5 minutes then take a wire whisk and stir...

Easy peasy!!! Take that filled eclair and dip away!!!
